Docker is corrupting MongoDB again, same as 7408

Description

In #7408 the Sync feature was causing MongoDB to become corrupt.
This week Docker Desktop has started automatically turning the experimental Sync feature on again even when I turn it off repeatedly, and again it's started causing corruption of data volumes.

Nope, this time it was on us. MongoDB is just not very good.
