Refactor Prestashop Plugin

The plugin for prestashop needs a refactor.
The first thing is to remove a lot of old code, which was used for v7 and earlier and is no longer needed.
Once the code has been cleaned, improve and simplify some functions.
This will make it easier for us to implement new developments.
Document code.
Create diagrams with mermaid.
