Bugfix: Investigate polar stereographic `point2grid` output that is all zeros for ice coverage input data

Describe the Problem

The values of ice_coverage variable from the command below are all 0 from the input data which is between 0.0 and 1.0. The same command except to_grid (lan/lon projection) produces between 0.0 and 0.9999.
