swap the priority of sections in the readme to favor/recommend .env instead of config.json?

Anyone have a strong view on this? if not, I'm going to put in the change today.

I prefer .env, it makes more intuitive sense to me and separates the environment variables from the rest of the files a lot more clearly 👍
