Support KIBANA_DOCS in Kibana link checking

In elastic/kibana#97059, the KIBANA_DOCS variable was added. The Kibana link checking doesn't actually evaluate this file, so has to do some fancy Perl substitutions to get the filenames to check. These substitutions should take this new variable into account.
