Use VCR :update_content_length_header option

Some of the VCR cassettes currently have the Content-Length response headers commented out as the response body has been altered from the original recording.
Use the VCR update_content_length_header: true option (pass to default_cassette_options or use in individual specs?) and bring back the Content-Length headers.
