The data you gathered is super nice. I have a suggestion for an improvement.
It is possible that 500 students are entering the mensa at a given time and 500 are leaving at the same time. The number of people in the mensa won't change, but queues at the counters will be guaranteed. The time one waits for food is greatly dependant on how many students arrive at a given time not neccesarily how full the mensa already is.
