[Cypress] Adapt tests for Rancher 2.7.2

We need to ensure our e2e for Rancher is compatible with version 2.7.2 when it is out.
A preliminary test on this version showed some flaws already:

We have to take a closer look at this one and other potential changes that may have occurred and prepare the tests for that once that version takes over 2.7.1
