Update deps ex_aws to 2.1

Is it possible to update the deps ex_aws to version 2.1?
The version requirement is specified as ~> 2.0, so this matches 2.1. You may need to unlock your dependency or specifically tell mix to update to the latest version. The version requirement in this project needs to be as relaxed as possible while still maintaining functionality.
