Dovecot

(This probably shouldn't be a Github issue, but https://ubuntuforums.org/showthread.php?t=185913 is closed, so I don't know where else to say this.)
I tried Courier and Postfix + SASL, but could never get it to work completely. Then I tried Dovecot, also for Postfix auth, and that is SO MUCH easier! Dovecot is better at certificates, easier with auth, and it provides Postfix with an auth mechanism! No more saslauthd, cyrus, pam!
I can make a PR to use those, but some people still seem to like Courier...
For now, I am not sure we need more than the link to Jerome's guide https://flurdy.com/docs/postfix/#config-imap-dovecot
I was talking about making it the default, instead of an alternative, since it's much easier. Your choice ofc.
