Update Acknowledgments

The current acknowledgments needs to be updated. Ideally, this should be handled in an automated manner to show contributors across all projects and produce some analytics.

Something like the top of https://chisel.eecs.berkeley.edu/blog/?p=220 or what was done for CCC 2018 would be a good start.
