[Request] (Occasionally) Provide a macOS build

I would love to see another build of Cozy as the old beta build is quite old. I was not able to build one myself though. I tried either your writeup as well as going through homebrew, but with neither I could get the build environment fully set up on my macOS Sonoma VM.
Would you consider providing another build now, as those would not have to be build as frequently as in the early days as Cozy got much more mature. If the current 1.3 GTK4 build is too much hassle being ported even an 1.2.1 GTK3 build would be more than welcome.
If someone gets it working on a mac, a pull request would be greatly appreciated, but I don't even have a working macOS VM so I can't help with that.
Unfortunately building on macos is quite a rabbithole with a lot of trail and error and I never managed to automate it in a way that was reasonable. I don't know how things have changed with GTK4. But I might give it a try again in the future.
