METADATA documentation is missing information for variable fonts

The documentation here does not contain any information regarding variable font table names, file names, etc. Some of this info is implicitly be emitted through fontbakery tests, but it would be good to have a authoritative source for how it should be.

The docs in here are old and based on legacy workflows. I'm fed up with valid support questions so I'm writing v2. You can find it here. Still wip and areas are still debatable.

Super, that already helps a lot.

Any info on "SC" variants of fonts?

I suppose to a large extent the folder and file structure is up to the repo to decide, aside from the "static" folder requirement next to variable fonts?
