Figure out native NixOS packages or Docker/Podman

At a glance, most of the services I need to run have unofficial (but maintained) NixOS packages but official Docker images.
Do the NixOS packages get updated in a timely fashion when new releases come out? If not, how hard is it to submit a new version and is that something I could do?
Is it worth the network and volume complexity of containers when NixOS accomplishes a lot of service isolation on its own?

Got Jellyfin's NixOS package running for now. Leaving this issue open for the time being 'cause not 100% committed to it.
