Align usage of new internal API

Sentry is using some new api internally in its integrations, let's update ours to reflect that.

One new thing I see getting used is scope.setSDKProcessingMetadata, which substitutes entirely the usage of a custom eventProcessor

This needs some more thought, I doesn't look that using that API improves our plugin internal logic 🤔 . We have a different way of customising the event metadata at the moment.
