Add Description how to run Indexer Subgraphs on Shimmer EVM

Nearly all dApps need Indexed chain Data. This is done via implementations like "TheGraph"
As we are not integrated with the Graph network, Nakama has developed a GraphNode that currently all projects are using.

Add information and the Link to that Repo to the Wiki https://github.com/nakamaio/graph-node

Important is that teams need to connect to one of the archive Nodes, not the public RPC. As those URL's are not public we need to make one URL public available for everyone to build on the chain
