After some first analyzes:

it works well for PostgreSQL
so it's related to MySQL
I'm testing to downgrade the mysql-connector-java from 8.0.20 to 8.0.19 and it seems to work better

When a Calendar was not used, a java.sql.Date value could not always be stored into and then retrieved from a MySQL server consistently. It was because Connector/J always converted a Date value to the server's time zone when storing it on the server as a MySQL DATE; but since a MySQL DATE does not have any time value, the hour, minute, and second parts of the original date was effectively lost. If the converted value is one day ahead of or behind the original value, when the value was retrieved through Connector/J and converted back to the local time zone, there was no time value for adjusting the date back to its original value, resulting in a one-day error. With this fix, any Date value is converted to MySQL DATE value using the JVM's time zone, so that the value is always consistent when being stored and then read back.

As with 8.0.19, I can confirm the one-day error

Not sure it's the correct one but it seems to work.
If we agree with this solution, it means I should change mysql-connector-java in jhipster dependencies and do a new release : is it correct @DanielFran ?

Just tried your suggestion @ecostanzi :

mysql-connector-java 8.0.20
change jdbc url for using ${user.timezone}
remove the TimeZone.setDefault(TimeZone.getTimeZone("UTC")); in post construct

This is strange that we just found it now, since the update was done 11 days ago: jhipster/jhipster@e9851ac

The updated version is also available in last spring-boot version: spring-projects/spring-boot#21188

This has been reported too to spring-boot here: spring-projects/spring-boot#21362

The solution is to rollback to previous version!

I will do it right now.

@DanielFran : we didn't detect this because :

no e2e tests related to update part with Angular
Integration Tests are mainly done with H2
but @ecostanzi encountered this, during his PR with testcontainers, that's why the jdbc url is not exactly the same one which is used in dev or prod profile
it has been detected by the builds in Vue.js blueprint, when I started to sync with master branch of generator-jhipster

So yes, the best way for now is to downgrade this driver
Then, there are still some work to do here to check:

no regression for user who will upgraded
testcontainers if it still works

I tested a lot of thing, the only way for now is to downgrade to 8.0.19, I didn't manage to make it works with 8.0.20

A new release of jhipster dependencies is done: 3.7.1
Then, I discussed with @ctamisier and it's not a good idea to add:

TimeZone.setDefault(TimeZone.getTimeZone("UTC"));

We can introduce some issues to our users who will upgrade their app.
So, with jhipster dependencies 3.7.1, we will fix the upgrade of entities which contain LocalDate, but the one-day bug will still be there. I'll open a new ticket for this.

Also, I tried to run the integration tests for that entity with testcontainers. I don't understand why the updateBeer test does not fail with the same exception. Any clue?
