Would it be there anything stopping to do it with an npm post install script?

Kindof, because it needs to know where the burp .jar file is located, and that's not stored in a standard location.

what if you wrap the latest burp on a npm package? Then you know :)

Burp isn't OSS, and I don't have permission to distribute it, so that's a no go. In any case, hopefully this is just a temporary workaround until native packaging is released for Burp, which Dafydd told me was coming soon.
