current `ipywidgets` examples are not working with `thebe-lite`

Describe the bug
context
All three of the demo apps have issues with the ipywidgets examples, it's not clear if this is bad configuration, poor use of the python modules or something else. Also these have been used ofr debugging recently and are rather contrived instead of being useful and simple demonstrations of how to set something up.
expectation
The demo apps should work with lite kernels and be simple & illustrative starting points for people learning about thebe.
Reproduce the bug
Run any of the demo apps and chose the lite option
List your environment
