Rename docs to "Jupyter Collaboration"?

Currently the docs mention "JupyterLab Realtime Collaboration":

However the project is now often referred to as "Jupyter Collaboration".

Should the docs be updated to reflect this? If so, maybe the ReadTheDocs project name should also be renamed?

This also raises the question of the GitHub organization where to host the repositories. Currently everything is in https://github.com/jupyterlab, but at least jupyter_server_ydoc should probably be in https://github.com/jupyter-server instead?

There seems to be an issue about where the RTC-related repos should live: jupyterlab/frontends-team-compass#257
