Replace unmaintained `bump2version`

As per this comment, Poetry v1.2 supports plugins, and some of them can make a perfect (and more robust, and maintained) replacement for bump2version (whose usage in the release and changelog workflows is quite kludgy).

Finally we will move to Bump My Version, a revival of bump2version, which has been declared unmaintained.
