I managed to fix this. I did a lot of google searching for "echo show actionable notifications" and https://community.home-assistant.io/t/actionable-notifications-via-alexa-media-player/193992/132 led me to #42 which got me to check the Echo Show 8 settings - the language was set to English Canada and the voice was Canadian 1,x1 whereas all of my echo dot's are English United States & American 1,x1. I first changed the voice to American 1,x1 but it still did not work. I then changed the language to English United States and it is working now.
