Fix 'off' contrast for some themes

Some of the themes, e.g. 'default' have a pretty low contrast when in 'off' mode. This makes it hard to see if a user has visual impairments or if a user's monitor contrast is off.
This might also be the time to look into doing "night mode" for each theme so that toggles would work well on dark backgrounds.
