Update the namespaces for metric names in GitProvider receiver

Overview

We got feedback on metric namespaces from the most recent pull request that can be found here. We need to adjust the namespaces in metrics and contribute that upstream to OTEL contrib.

Definition of Done

  • code is adjusted to feedback
  • contributed and merged into our liatrio-otel-collector
  • contributed and merged into upstream otel-contrib
  • update the otel demo to reflect the metric updates (dashboard)
  • update documentation on adding more metrics and golden file generation
