[logzio-k8s-telemetry] Migrate from spanmetrics processor to the spanmetrics connector

As of OpenTelemetry Collector 0.74.0, spanmetrics processor was deprecated in favor of the spanmetrics connector.

The connector simplifies the config by being both an exporter an a receiver.

The latest chart version (0.2.1) for logzio-k8s-telemetry uses OpenTelemetry Collector 0.73.0, so an upgrade would be required.
