Evaluate dragonflydb as redis replacement

If dragonflydb's cluster mode works more reliable than what redis offers it might be a good alternative to replace all the single-pod redis instances with a shared multi-pod cluster.

Looks good so far, Gitea is doing fine with it. Will migrate the remaining apps using redis over to it soon.
