Resource naming

Resources are named inconsistently (some are singular some are plural) throughout the app. The backend api, for example, uses singular resource names and the frontend routes utilize plural versions. We need to make these consistent...I think making them all plural is the way to go so that links look like "/myVMT/courses' which accurately describes the user is looking at a list of courses and not a single a course...doesn't really matter though.
