Hello. Is there a way to filter the created_at field saved with postgraphile-audit-plugin?

Not out of the box. You can order by that, but I'm not sure what would be required from our side for filtering on it, since we have not had that requirement yet ourselves.
You can filter on the auditEvents sub-connection, but I fear that won't help you.
