Cool gem!

Nothing wrong with the name but I feel it could be better than json_or_ruby_to_csv .
Here are some suggestions :

any_to_csv , shift_to_csv, ruby_to_csv, csv_converter, many_to_csv

Either or, if you decide to change, I'll open a PR and do it.
