Allow users to customize colors however they want by choosing theme variables

Currently the themes are defined as a collection of css variables, this should be fairly easy to make customizable by allowing the user to pick the color they want for each variable (or a subset) and then inject them using lit.
Haven't seen much requests for this so will keep it on back burner for now.
