how about a status button for each ratio that's there constantly?
e.g.:
[ flour/sugar ] [ flour/butter ] [ sugar/butter ]
and they are colored green when good, red when bad
or...
flour:sugar [ OK ]
flour:butter [ TOO HIGH ]
sugar:butter [ TOO LOW]
however, note that having the numbers does make it simpler to figure out which way to move the slider. maybe there's a way of marking on the slider the suggested range?
so to conclude, I suggest a combo of the colored status buttons AND a slider with ticks that mark the suggested min and max range
