Find another platform instead of GitBook

According to the readme in GitBook repository, the long predicted step happened (half a year ago actually). GitBook CLI is no longer maintained and only GitBook.com is supported. If we want to stay safe and use some maintained tool, we should find a replacement.

If you don't have any strong preference already or do not have time to research the options, I may spare some time to do so. Some alternatives I have found so far:

Personal note: I am already a little inclined in favour of mdBook because of Rust.

It's a known problem, but didn't have time to invest to look into it.

The Telemetry documentation move to mdBook, and it didn't seem like a lot of work, so I think that would be the natural choice.

Nice, I wasn't aware of that. Let's go for mdBook then.

From that PR (mozilla/data-docs#187) it seems rather mechanical. If it takes a day in total to move both localizer-documentation and documentation, I will do that during the next week or the week after.
