Layout not loading in ZF3

It seems the layout is not loading in the latest ZF3, or I am being dumb. However I followed your "docs" and it has no effect. I even tried with the "plugin" way, yet all my emails have:
<meta http-equiv="Content-Type" content="text/html; charset=us-ascii">
So not even the charset is loading.
What are my options ?

Sorry but all I can say is that this module is very messed up, especially when you want to customize something.
Best of luck, I`m writing my own.
