Fix security vulnerabilities discovered by Trivy

Context

We have recently enabled Trivy image scanner to check for security vulnerabilities and there are a handful of CRITICAL alerts that will likely need to be addressed asap.

Value and/or benefit

Scanning for vulnerabilities needs to translate into action.
