images: alpine-slim tag does not have support for linux/ppc64le anymore

Hello,

I saw that the latest version of the alpine-slim tag: https://github.com/nginxinc/docker-nginx-unprivileged/pkgs/container/nginx-unprivileged/347391507?tag=alpine-slim does not have support for the linux/ppc64le architecture. As I see that latest still has it, I was wondering whether this was an issue or support has been dropped.
