Make poetry version configurable

The poetry version should be configurable, maybe with a default to the latest stable version or to the version used to generate the Dockerfile.

This would help to have consistency with other poetry tasks outside the generated Dockerfile.

I'll try to create a PR myself for this, seems like an easy fix
