Enhance typography

We want to change the style of typography in the docs site to enhance readability. 3 initial changes are proposed:
- Make headings larger
- Make body text lighter (closer to white to enhance contrast)
- Slight increase body text weight
- Make sure horizontal rules
---in markdown are styled and update docs to use them to create visual grouping of content
Updating the content with
---horizontal rules will be done as a separate issue during content refresh - this issue just needs to ensure they're styled.
