Udating to Julia v1.7 breaks eglot-jl because of LanguageServer being forced to v3

LanguageServer.jl fails to compile and it forces the server to exit abnormally.

As described, if the compatibility line from the Project.toml is removed and the environment is updated, we no longer have this error.
