ProtocolLib looks promising, try out a separate track with serializeItemStack of the items stacks in the inventory and compare it with my solution. Keep the best :)

Version 0.3 is now based on ProtocolLib, it is not default but the plugin will convert old data to the new format and start to use it. ProwerNBT is now deprecated and will be removed in the future.
