simpleFlake exposes `overlays` output as list

The current overlays attribute returned by simpleFlake is a list where it seems that the "canonical" (See https://nixos.org/manual/nix/unstable/command-ref/new-cli/nix3-flake-check.html and https://nixos.wiki/wiki/Flakes ) format is to have it as a mapping.
Having it as a mapping would allow to apply a subset of the overlays more easily.
