Is it possible to add Let's Encrypt to allow automatic cert creations for *.ddns.example.com ? can you point me to right direction?

Hello roozbehk! sure, you just have to look for some example of how to put Let's Encrypt with nginx, usually it is a docker service.
In this project I don't have it because I use a paid certificate.

But it will work for a single subdomain, you will not be able to do it for a wildcard.
