Add option to just print the version

Currently you can get the opentelemtry-collector-builder version from the --help output, although that requires finding it in a multi-line entry. There is a --version option, but this behaves differently from the typical --version option for CLI commands.

It would be useful to have an option which returns a single line response containing the version
