Make xtend files easier to manage

Is your feature request related to a problem? Please describe.
The current code contains xtend files which are a JVM dialect that doesn't have as much tooling or attention as Java does.
Describe the solution you'd like
Move all .xtend files to Java to make them easier to manage. This is the supported option from the xtext community going forward (from some casual searching).
