Move from usage of https://github.com/bcgov/aries-acapy-plugin-redis-events to https://github.com/hyperledger/aries-acapy-plugins/tree/main/redis_events

Errors are happening in ACA-Py agents dealing with this in the nightly runs and every time someone starts an ACA-Py agent container.
