Request: Update go-elasticsearch to 8.7.0

Context
The elastic preset currently uses elasticsearch v7.17.0 which is a bit outdated.
Would it be possible to update this to use the latest v8.7.0?
I have some time on my hands to open a Pull Request and help with the implementation.
