dask gateway notebook doesn't currently work on aws binder

AttributeError: No option 'environment' available running 3-dask-gatewaycluster.ipynb because the gateway option handler isn't configured for environment variables.
xref: pangeo-data/pangeo-binder#175
workaround is to run this notebook on jupyterhub for now (https://aws-uswest2.pangeo.io/)
