Refactor tests to increase maintainability

@rabernat mentioned in #93 (comment), that some of the tests could be simplified.

I just wanted to open a new issue to keep track of this:

  • I suspect we could refactor the tests to only use one of these example dataset, making them easier to read and maintain
  • We might want to drop the 'options' from here and here or refactor them into a fixture?
