Add customization of pallet name and pallet function

In case polkadotXCM, xTokens, or another supported XCM Pallet is named differently on either testnet or some mainnet chain, add the ability to override the pallet's name and function name. The user will have to provide what pallet it is based on (e.g., polkadotXCM).
