Upgrade to Xcode 16

Xcode 16 is the latest version and has new features that should improve our dev experience including:
- AI code completion
- faster SwiftUI Previews
- Swift testing
We should officially upgrade by bumping .xcode-version after fixing the following issues:
- Fix swiftui previews
- Fix warnings
- Fix tab bar on Mac/iPad
