Reorganize website images folder

by end of summer 2024: reorganize the website images folder to make it easier to navigate so that we aren't duplicating images for various posts and website pages.
TODO:
- create intuitive naming schema
- review naming with @lwasser
- implement changes, working in small PRs to ensure images aren't breaking across the website
